1 - Clos des briords Muscade Clos des briords Muscadet 2007 $17

100% Muscadet from the western Loire Valley, fermented "sur lie" - that's a fancy way of saying they keep the wine in the barrel (on the lees or sur lie) all winter, this allows the wine's aromas, body and texture to develop, and the carbonic gas produced by this process imparts a liveliness on the palate. Only wines made from the best vineyards are permitted to use the Sur Lie designation. Absolutely perfect for seafood and shellfish - Including this recipe, that we managed to steal from the private recipe box of Dr. Henry Mann:

"Saute garlic and a small chopped onion slowly; add chopped fresh tomatoes and let it simmer; add 1/2 to one bottle of dry white wine. Add some fresh or dried thyme, Chile garlic paste, and a 1/4 cup of Pernod and you could add a little saffron. I also might add some Vietnamese fish sauce. Cook it until it is perfect and correct seasoning. Then cook the mussels for a very short time, stopping as soon as most of them are open."

Please try the wine this Friday night - and if you want to spice up your weekend - try the recipe too. You'll note that the exact measurements were not on the dog-eared copy of the Dr's stained 3x5 inch card - just cook with your heart, you will know when it is right.



2 - De forville Lange Nebbiolo 2007 $21
De forville Lange Nebbiolo

The DeForville family emigrated to Piedmont from Belgium in 1848 and established themselves in the village of Barbaresco in 1860. Here, the family was instantly engaged in growing the Nebbiolo grape. In 1907 Paolo Anfosso married into the DeForville family and took over the reins of the family business.

For five generations, the Anfosso family has lived in the nearby town of Castagnole Lanze and, to this day, vineyards are maintained in Castagnole where the current Anfosso generation grows Moscato, Grignolino and Barbera. In the early part of this century, the DeForvilles sold their wine in bulk directly to restaurants and to retailers who then bottled the wine.

In 1940 the Anfossos bottled their first wine and now virtually their entire production is bottled at the estate with annual output averaging 100,000 bottles. Valter and Paolo Anfosso, sons of Bruno, now manage the estate. This is a very light and fine expression of, one of the prettiest wines I've ever seen.


3 - Cascina Ballarin Tre Ciabot Barolo 2000 $35

Cascina Ballarin was founded in1928 and is a small but prestigous producer with a total anual production of about 30,000 bottles.The winery has holdings in the communes of La Morra, Monforte d'Alba and Novello, blending wine from all three to create Tre Ciabot.


The 2000 vintage in Barolo was exceptional, and this shows the character of that great vintage and the results of several years of bottle maturation.

The wine has ideal Barolo flavors of roasted red cherries, and blackberry fruit beneath a bouquet of lavender, violets and licorice.








4 - Allegrini Palazzo della Torre 2005 $21

Allegrini Palazzo
Allegrini represents the highest expression of Valpolicella wines, with passion for elegance, commitment to excellence and a long heritage in refined winemaking style.

A smooth, full-bodied cru made in an innovative ripasso style, sacrificing its DOC status by replacing the Molinara grape with Sangiovese. 70% of the grapes picked are vinified immediately. The remaining 30% are left to dry until the end of December when they are vinified and then re-fermented with the wine from the fresh grapes.

The result is higher alcohol content, rounder style, lower acidity and more extraction than a Valpolicella Classico. A classic accompaniment to grilled or roasted vegetable or meat dishes.

The History:
Tonic water was first enjoyed in 1825 when ingenious (or hard drinking, depending on how you look at it) British officers in the Indian Army improved their bitter anti-malaria medicine-Peruvian quinine extract-by mixing it with soda water, sugar, and gin. Instead of drinking the medicine with their troops at dawn, the officers figured out how to enjoy it at cocktail hour. The original gin and tonic was born, and it soon became the quintessential drink of the British Empire.

Tonic water's story begins two centuries earlier, in 1638. The wife of the Spanish Viceroy in Peru, the Countess of Chinchon, had fallen violently ill with malaria. Her husband begged the local Incas for an antidote. In a show of generosity, the Incas instructed her to drink a potion containing the ground bark of the native "Quinquina" tree, which grew on the slopes of the Andes. The potion worked and she quickly recovered. In her honor, the Spanish renamed the Peruvian tree the "Cinchona" tree. They also killed off the Incas, stole their gold, and colonized their land.

The ground bark was then imported to Europe and quickly prized. But Peru prohibited exporting Cinchona seeds.
So, as colonialism and hard-drinking officers created more need, the supply of Peruvian Cinchona bark could not keep up with demand.
Prices skyrocketed - at one point, the cost of the bark powder was its weight in gold - and the bark was over harvested. The Cinchona tree became nearly extinct.

In 1862, Charles Ledger smuggled Cinchona seedlings out of Peru and sold them to the Dutch government. Holland set up large plantations in Java, their colony in Indonesia.

1 - Varaschin Prosecco Brut NV $15

It is believed that Prosecco was already produced in Roman times, possibly as the vinum pucinum praised by Pliny the Elder.

It is, at any rate, one of the oldest wine grapes in Italy and ranks about thirtieth in importance among the country's some 2,000 grape varieties. The name of Prosecco is derived from the northern Italian village of Prosecco (Trieste), where the grape is believed to have originated.


Light and soft the wine pairs well with food or is perfect on it's own when the sun finally decides to shine.






2 - Mas Cal Demoura Qu'es Aquo Rose 2008 $20

In 1970, when there was a great exodus from the Languedoc due to a loss of faith in its vineyards to provide a sufficient living, Jean-Pierre Jullien named his domaine "Cal Demoura", which in Occitan means "one must remain". He came from a long line of vignerons and, at that time, he followed most of his colleagues as they closed their caves and attempted to survive by participating in the local cooperative. Jean-Pierre's son, Olivier, refused to follow the path of the cooperative and established his own domaine, the "Mas Jullien", in 1985.

Jean-Pierre, in a reversal of the usual process, took the example of his son, resigned from the cooperative and recreated his own estate in 1993. He sold off a portion of his vineyards and retained only the best 5 hectares. With these, he began making a wine of regal dimensions that helped to lead the qualitative revolution in the Languedoc. In 2004, Jean-Pierre retired, selling the estate to its current owners, Isabelle and Vincent Goumard. Seduced by the estate's winemaking philosophy, as well as by the potential of its terroir, the couple spent a year working side by side with Jean-Pierre in the vineyard and in the cellar, before taking full control of the estate.Mas Cal Demour label

The five hectares are located in the village of Jonquières and in the neighboring community of Saint Felix, approximately 45 minutes northwest of Montpellier, just south of Clermont l'Hérault. They are situated in the heart of the Terrasses du Larzac, an independent subdivision within the Coteaux du Languedoc AOC that was recognized in 2004.

The vineyards feature five grape varieties in approximately equal parts: Grenache, Mourvedre, Syrah, Carignan and Cinsault. The average age of the vines is 25 years with significant parcels of Grenache, Cinsault and Carignan being considerably older. The soil is very dry and stony with a deep but porous topsoil. The various parcels of the domaine are distributed over a terroir that is both geographically and climatically diverse. These variations, combined with an assortment of different cépages, result in wines of complexity and finesse.

"Qu'es Aquo" Rose: A rich, expressive and aromatic rosé, the Qu'es Aquo is made in the same spirit as the domaine's red wines, using the same five cépages - Grenache, Syrah, Mourvèdre, Cinsault and Carignan - but in a different blend that favors Cinsault and Syrah. The rosé is saignée and vinified like a white wine to emphasize its aromatics. The Qu'es Aquo is a substantial rose that pairs well with food.




3 - Cascina Ballarin Cino 2006 $15

A blend of 20% Nebbiolo, 40% Barbera and 40% Dolcetto from the center of Piedmonte Italy.

Bright ruby-red; very vinous, intense, fresh nose showing a range of fresh fruit and flowers; rich, luscious taste that's smooth and medium-bodied; excellent as an everyday wine.





















4 - Castro Ventosa Tinto 2006 $11

The Bierzo D.O. is located in the northwest of the Province of Castilla y León, just above Portugal. Castilla was one of the original Spanish regions to unite against the Moors in the Middle Ages and thus became the north-west stronghold for the Catholics. The region has a great historical past with many remains that testify of its rich history.

The winery is situated in the village of Valtuille de Abajo at the foot of the slope of the Castro, the ruin of an ancient Roman fort that dominates the village of Valtuille de Abajo. Some of Castro Ventosa's vineyards are planted on that same hill just around the ruins, the name Castro Ventosa means "The Windy Castle".

The Tinto Joven Vineyards are spread out in different locations in the village of Vatuille in Bierzo and all are agianst a slope. The winery is situated at the foot of the South Western slope of el Castro (the ancient castle); 590 meters above sea level. The climate is continental with some Oceanic influences; the medium yearly temperature is 13º Centigrade with an average of 800 millimeters of rain per year.

Close attention is given to the vines and hardly any machinery is used in the vineyards to retain tradition but also old methods are best suited to the area.
Fermetation takes place in stainless steel tanks and the wine is bottled 1 month after the end of harvest

The History:
is old school. Sipping it takes you back in time. You can imagine Churchill pulling down this stuff while trying to decide what to do about those Germans.

Junipero makes a really perfect gin martini: The juniper, as you'd imagine from the name, is up front yet not overpowering. But it's more spicy than evergreen, so you don't feel like you're constantly chewing pine cones when you drink it.

Of course there's more to it than that, though, and Junipero, like most other gin makers, keeps its recipe secret. It's hard to put your finger on much beyond some lightly bitter orange and lemon peel and something that gives it a kick of sweetness, but I can say that whatever Junipero puts in this gin, it works really well in the glass.

At the classic 94.6 proof, I was sure Junipero would be blazingly harsh consumed straight, but it wasn't.

Better, though, was to toss a few rocks in. As the ice melts, the water brings out the fruit peel flavors and mellows the juniper berry further. Summer is for GIN.

I'm going to take
it one step further, it's the best Malbec ever produced in Argentina, the quintessential expression of old, high altitude Malbec vines.

Trapiche made this wine only once, as a homage to the man who worked the vineyard for so many years, Felipe Villafane. $50




1 - Chateau La Rame Bordeaux blanc 2007 $16
La Rame Bordeaux

Situated 40 kilometers southeast of the city of Bordeaux, Chateau La Rame is among the oldest and most renowned properties in the Sainte Croix du Mont appellation.

The estate was purchased by Claude Armand, the father of the current owner Yves Armand. The 20 hectares of La Rame are set on a clay-limestone soil blessed with the exceptional substratum of a fossilized oyster bed dating from the Tertiary period.

The hillside vineyards face south and slope down toward the Garonne river. This cuvee is a dry Sauvignon blanc, aromatic and focused, well suited to accompany a plate of oysters, and thus complete the cycle of life.

( if you didn't get a chance to try the Belle Pente rose, there are two more cases coming this week, a riot of Rhubarb, Black Pepper and Strawberries, yum!)

The wine was a surprise and a pleasure, vigorous and layered with pronounced fruit and structure. So we decided to open it again, with it's father the Cocciapazza Montepulciano.

The vineyard yields for these wines are kept extremely low and the selection process at harvest time is nothing short of rigorous: the 2000 vintage (their first) was completed after six passes through the vineyard, in order to only harvest the most perfectly ripened grapes. The grapes are then subjected to the sorting table, tended to by four people, two preside, and who pick out any berries that look anything less than perfect.

During the winemaking process the production is further limited in the interest of quality. A drawing off of some of the must during maceration occurs to increase the red wine's concentration. The drawn off juice or exsanguination is not wasted, but used to make one of the most attractive rosés you've ever tasted.
