1 - cour cheverny Francois Cazin Cour-Cheverny 2007 $15

Cheverny is one of the most recent new appellations in the Loire Valley (1991). The area, south of the Loire and abutting the marshy region of Sologne (the best hunting grounds in France), has produced wines since at least the 6th century.

Cour-Cheverny is made from Romartin, a local variety of grape introduced to the region in 1519. The wine exhibits bright acidity and classic Loire minerality, with a fresh lemon finish that lasts for days.

François cazinFrançois Cazin tends vines of considerable age and the resulting yields are well below average in any given year. His Cheverny is fresh and floral, with appley-texture and crisp acidity. The flavors are sleek and precise. Since 1997, the wine has been bottled unfiltered by gravity. His wines have consistently been the top pick of the vintage at the annual Loire Valley wine show in Angers.










2 - Mulderbosch Mulderbosch Cabernet Rose 2008 $12

A lovely, lively, bright and clear pomegranate colour and has complex layers of strawberry, cherry, roses and fresh peaches on the nose. The wine has a nice, spicy and slightly peppery taste on the palate and is well balanced with a fresh long aftertaste.

Serve well chilled. An excellent aperitif or picnic wine. The ideal summer salad wine. Serve with fresh, seared tuna steaks; veal limone; poached salmon; asparagus quiche; cold crayfish salad; vegetable spring rolls dipped in soy sauce; ideal with sushi and other Japanese delights.








3 - Louis Latour Domaine de Valmoissine Pinot Noir 2006 $15

The family-run company of Maison Louis Latour is one of the most highly-respected négociant in Burgundy. Renowned throughout the world for the quality of its red and white wines, the company has built a reputation for tradition and innovation.

Valmoissine bottleThe Domaine de Valmoissine is located on the site of the ancient monastery and university of Valmoissine at 500 meters above sea-level. The grapes are entirely hand-picked before being fermented in stainless steel open-vats for a short period of 3-4 days. The wine is then matured in old oak casks from Maison Louis Latour's cooperage in Beaune in which the wines flavors and aromas develop naturally with the mellow wood flavors of the oak.

Latour is a famous name that will impress your guests - but the style of the wine resembles Burgundy's classical 'Vin Vermeil' that the first Louis Latour was producing at the end of the 18th century. Elegance and finesse packed with fruit, and a vivid bright red color. The resurrection of this style of wine already has a dedicated following - and it is hard to beat for the price.

1 - Clos des briords Muscade Clos des briords Muscadet 2007 $17

100% Muscadet from the western Loire Valley, fermented "sur lie" - that's a fancy way of saying they keep the wine in the barrel (on the lees or sur lie) all winter, this allows the wine's aromas, body and texture to develop, and the carbonic gas produced by this process imparts a liveliness on the palate. Only wines made from the best vineyards are permitted to use the Sur Lie designation. Absolutely perfect for seafood and shellfish - Including this recipe, that we managed to steal from the private recipe box of Dr. Henry Mann:

"Saute garlic and a small chopped onion slowly; add chopped fresh tomatoes and let it simmer; add 1/2 to one bottle of dry white wine. Add some fresh or dried thyme, Chile garlic paste, and a 1/4 cup of Pernod and you could add a little saffron. I also might add some Vietnamese fish sauce. Cook it until it is perfect and correct seasoning. Then cook the mussels for a very short time, stopping as soon as most of them are open."

Please try the wine this Friday night - and if you want to spice up your weekend - try the recipe too. You'll note that the exact measurements were not on the dog-eared copy of the Dr's stained 3x5 inch card - just cook with your heart, you will know when it is right.



2 - De forville Lange Nebbiolo 2007 $21
De forville Lange Nebbiolo

The DeForville family emigrated to Piedmont from Belgium in 1848 and established themselves in the village of Barbaresco in 1860. Here, the family was instantly engaged in growing the Nebbiolo grape. In 1907 Paolo Anfosso married into the DeForville family and took over the reins of the family business.

For five generations, the Anfosso family has lived in the nearby town of Castagnole Lanze and, to this day, vineyards are maintained in Castagnole where the current Anfosso generation grows Moscato, Grignolino and Barbera. In the early part of this century, the DeForvilles sold their wine in bulk directly to restaurants and to retailers who then bottled the wine.

In 1940 the Anfossos bottled their first wine and now virtually their entire production is bottled at the estate with annual output averaging 100,000 bottles. Valter and Paolo Anfosso, sons of Bruno, now manage the estate. This is a very light and fine expression of, one of the prettiest wines I've ever seen.


3 - Cascina Ballarin Tre Ciabot Barolo 2000 $35

Cascina Ballarin
Cascina Ballarin was founded in1928 and is a small but prestigous producer with a total anual production of about 30,000 bottles.The winery has holdings in the communes of La Morra, Monforte d'Alba and Novello, blending wine from all three to create Tre Ciabot.


The 2000 vintage in Barolo was exceptional, and this shows the character of that great vintage and the results of several years of bottle maturation.

The wine has ideal Barolo flavors of roasted red cherries, and blackberry fruit beneath a bouquet of lavender, violets and licorice.








4 - Allegrini Palazzo della Torre 2005 $21

Allegrini Palazzo
Allegrini represents the highest expression of Valpolicella wines, with passion for elegance, commitment to excellence and a long heritage in refined winemaking style.

A smooth, full-bodied cru made in an innovative ripasso style, sacrificing its DOC status by replacing the Molinara grape with Sangiovese. 70% of the grapes picked are vinified immediately. The remaining 30% are left to dry until the end of December when they are vinified and then re-fermented with the wine from the fresh grapes.

The result is higher alcohol content, rounder style, lower acidity and more extraction than a Valpolicella Classico. A classic accompaniment to grilled or roasted vegetable or meat dishes.

The History:
Tonic water was first enjoyed in 1825 when ingenious (or hard drinking, depending on how you look at it) British officers in the Indian Army improved their bitter anti-malaria medicine-Peruvian quinine extract-by mixing it with soda water, sugar, and gin. Instead of drinking the medicine with their troops at dawn, the officers figured out how to enjoy it at cocktail hour. The original gin and tonic was born, and it soon became the quintessential drink of the British Empire.

Tonic water's story begins two centuries earlier, in 1638. The wife of the Spanish Viceroy in Peru, the Countess of Chinchon, had fallen violently ill with malaria. Her husband begged the local Incas for an antidote. In a show of generosity, the Incas instructed her to drink a potion containing the ground bark of the native "Quinquina" tree, which grew on the slopes of the Andes. The potion worked and she quickly recovered. In her honor, the Spanish renamed the Peruvian tree the "Cinchona" tree. They also killed off the Incas, stole their gold, and colonized their land.

The ground bark was then imported to Europe and quickly prized. But Peru prohibited exporting Cinchona seeds.
So, as colonialism and hard-drinking officers created more need, the supply of Peruvian Cinchona bark could not keep up with demand.
Prices skyrocketed - at one point, the cost of the bark powder was its weight in gold - and the bark was over harvested. The Cinchona tree became nearly extinct.

In 1862, Charles Ledger smuggled Cinchona seedlings out of Peru and sold them to the Dutch government. Holland set up large plantations in Java, their colony in Indonesia.

1 - Inama Soave Inama 2007 $16

Most people in the world want predictable wines. I want to make wines that are bloody different, and wines that are different year to year " - Stephano Inama.

And so he does, 100% Garganega, hand harvest from vineyards of Basaltic Lava. Light yellow in color, with an elegant nose of Camomile and Elder flower.











2 - Ondarre Reserva Rioja 2002 $18

This is an awesome find. Intense cherry red color. Aromas of oak ageing with hints of spices. Strong attack, good backbone, full-flavoured, with well integrated long-lasting tannins.

Long and persistent finish. 16 months in American and French oak casks of the Bordeaux type, with racking performed four times.

Only released for sale when ready for drinking at its best.







3 - Steltzner Claret 2006 $18

This has intense, deep red-violet color, and ruby hues, showing the concentration of the grapes.

The wine shows aromas of black fruit jam and liqueur, with notes of vanilla, chocolate and smoke.

On the palate, it is ample and rich, with a long finish and soft tannins.








4 - Domaine Du Gour Chaule Gigondas 2004 $35

Du Gour Chaule

The Domaine du Gour Chaule comprises 15 hectares, 10 of which are within Gigondas with the remaining 5 situated in the surrounding communes of Vacqueyras and Violes. The proprietor, Aline Bonfils believes strongly in Grenache as the heart and soul of Gigondas. Thus, 85% of the vineyards are planted to Grenache, with approximately 10% dedicated to Syrah and Mourvedre and the balance planted to Cinsault.

There is a three week cuvaison. A small amount of press juice is added back to the cuvee. Malolactic fermentation takes place in cuve and, after the malolactic fermentation is complete, the wine is racked into large oak "foudres" where it stays for approximately 18 months. The wine is racked no more than three times before it is bottled - unfined and unfiltered - 30 to 36 months after harvest.

New oak is not used at this domaine. The resulting wine is sturdy, braced with sweet, dusty tannins, and intensely aromatic with notes of crushed white pepper, oriental spices and game.

1 - Les Deux Tours Sauvignon Blanc 2006 $17

Les Deux Tours

The Loire Valley did not invent Sauvignon Blanc, but men like Baron de Ladoucette have come to define it with wines from Sancerre and Pouilly Fume.

This is a humble little number with a Touraine appellation that nonetheless shares the same soil and meticulous wine making of the standard bearers of the La Doucette family.

Stainless steel fermentation on fine lees creates a wine of body and richness, while preserving the racy acidity and floral notes that define Loire Sauvignon Blanc.

This wine is a natural pair for goat cheese, the Loire's other great contribution to human society.



2 - Chateau Saint-Sulpice Bordeaux 2006 $14

This bulletproof bottle sits patiently on the shelf, its price still unchanged where it seems all others have inched upwards.

Wine maker Pierre Duberge oversees the small 100-acre vineyard and the classic winemaking process.

Bordeaux, it's what's for dinner.











3 - Trapiche Broquel Malbec 2007 $15

4 - Paolo Bea Rosso Montefalco 2004 $68

Paolo Bea Rosso Montefalco 2004 $68 References in the archives of Montefalco, the beautiful hill town in Umbria, document the presence of the Bea family in this locality as early as 1500.

This tiny estate is the classic Italian fattoria, producing wine, raising farm animals for trade and home consumption and working the land to produce olives, fruits and vegetables. To this day, the Bea family raises and produces much of what they consume on a daily basis. Paolo Bea, the senior member of the family at 72 years of age, is the guiding force behind the production of this series of intense and idiosyncratic wines. He is assisted by his two sons, Giuseppe, who farms the vineyards, and Giampiero, who assists in the vinification and is responsible for all commercial aspects of the winery.

 Paolo Bea MAPThe entire property encompasses 15 hectares: 5 of which are dedicated to the vineyards, 2 to olives, and the remainder to the fruits, vegetables and grains that are grown. Sagrantino is the predominant grape, covering 60% of the vineyard surface.

The remaining 40% is planted to Sangiovese and Montepulciano, with a small parcel planted to several white varieties. The vineyards are cultivated virtually organic.
